Apple Brandy Molasses Cookies

Ingredients

  • 10 T. butter (one stick and a quarter) room temperature
  • 1/2 c. brown sugar 
  • 1 egg
  • 1 t. vanilla extract
  • 1/4 t. baking soda
  • 1/2 t. salt
  • 1 t. grated ginger
  • 1 t. mace
  • 1/2 t. nutmeg
  • 1/2 t. cinnamon
  • 2/3 c. blackstrap molasses
  • 3 T. Yahara Bay Apple Brandy
  • 2 c. flour

In a bowl, cream the butter and sugar.  Add the rest of the ingredients then slowly the flour.  The dough will be very sticky.  Place the bowl in the refrigerator for about half an hour.  Preheat the oven to 375 degrees F.  Drop 1 inch scoops onto a baking sheet and bake for about 10 minutes.  Place the bowl back in the refrigerator until you make the next batch.  The cookies should be shiny and smooth when it’s done.  Let it sit for a couple of minutes in the pan after taking it out of the oven.  It should be easy to lift after that.  Transfer to a cooling rack.  You’re house will smell amazing.
