This fruit brandy is distilled by Distillerie Paul Devoille, Fougerolles, France, established 1859. The pears from the Rhone valley are harvested when ripe, carefully fermented over the course of 5-8 weeks and distilled in a century-old copper still. The eaux-de-vie are kept in glass carboys covered with wicker under the roof in the attic of the distillery for at least 2 years. The Paul Devoille Distillery is the last Fougerollaise distillery to practice this type of ancestral aging. The pear aromas are concentrated, the flavor is distinct and pure, and the finish is clean with long-lingering notes of pear.
